Quick Quinoa and Veggie Bites

I really love quinoa, and would love to serve quinoa to Lucas, but unfortunately Lucas started getting frustrated with any food that he couldn’t eat by himself. And quinoa is one of the hardest foods for a toddler to eat alone. So I’ve been practicing with ways to bake quinoa into bites.

These quinoa bites are a vehicle for both quinoa and veggies. I’ve tried this recipe with a variety of veggies (onions, peppers, broccoli, zucchini, tomatoes). And it turns out well no matter what you sub in.

I make this in a small quantity so that they can be consumed within two days. You can double the recipe if you want to cook for the whole family! I use this silicone mini muffin mold to make these, because the bites just pop right out. You can mold them into balls if you prefer, but I find these molds the easiest!

 

In a small bowl, mix together:

1 cup of cooked quinoa

1/2 cup shredded cheddar cheese (or another empty cheese of choice)

1 tablespoon Parmesan cheese

3/4 cups of green veggies (I used 1/4 cup each of peas, finely chopped spinach, and finely diced green pepper)

1 whisked egg

1/4 teaspoon onion powder

1/4 teaspoon salt

Mix together quickly, spoon into a mini muffin mold (to the top, these won’t rise!). Put into a preheated oven at 375 degrees for about 20 minutes.
